Try this wonderful BBQ Pork Ribs Recipe for a culinary treat offered up from your own Bbq this summer! Ingredients: 4 lbs. of thick and meaty pork belly ribs, BBQ sauce (smoked variety), Red wine, Ketchup, Worcestershire sauce, Honey, Rosemary fresh leaves, Oregano flakes, Salt & pepper to taste, Corn starch or flour
You will notice that amounts were not included for the ingredients because you could adjust the quantities to fit your taste. The truth is the more you use the better it tastes! This recipe serves four hungry people.
Preparation
You first will want to marinate the ribs. Place them in a plastic bag or non-metal container and after that sprinkle with a lot of fresh rosemary leaves, oregano flakes and pepper. Note: Feel free to use dried rosemary but this gives an entirely different flavor. Don’t use salt at this point. You can then cover the ribs with honey, BBQ sauce, ketchup and Worcestershire sauce.
Turn the ribs and repeat the exact same operation, then add the red wine, being careful not to wash out the coating of the ribs (you need to pour the wine into the corners of the container). The wine must cover the majority of the ribs. Allow them to marinate overnight in the fridge, properly turning several times.
Get the charcoal prepared and ensure you have lots of it considering that pork takes a lot longer than beef to cook through. You need to cook the ribs on the upper rack of the grill.
Procedure for Cooking
When the meat is seared on one side, turn it around and put the salt over this side, then repeat the salting process when the reverse side is also sealed. Then relocate the ribs to the upper rack of the grill for the rest of the cooking.
Keep rotating the ribs while they cook so that they don’t burn. You should check for completion by slicing into the thickest part of any one of the ribs to inspect the color of the meat. For a moist outcome you can take the ribs off the grill when the color is a very light pink with no blood found. If you prefer to have your ribs well done and dry you should look for a totally white color before moving off the grill.
Some 5 minutes before the ribs are finished, pour more honey over them, allowing it to melt.
Sauce
Make the sauce while the ribs are cooking by pouring the marinade into a skillet and use 2-3 teaspoons of cornstarch or flour to thicken up the sauce. Bring to a boil and simmer for a few minutes. Put in a pinch of salt if you wish and if the sauce isn’t thick enough you can add more cornstarch. You can dissolve the cornstarch in water or wine before pouring into the sauce in order to avoid lumps.
Important: If you do not want your sauce to taste like cornstarch you have to allow it to cook for about ten minutes in the sauce. When your sauce and ribs are ready serve them in separate bowls. All you will need is a glass of fine wine and good company in order to savor your beautifully grilled ribs.
