Anyhow, about the Protein Freeze recipe contest winners. 1st place goes to PattyK for her fruit roll-up (pancake/crepe) and second place goes to Rachel for her protein cookie. I also adored the tapioca pudding by Kim Shuman.
All the recipes had been fantastic and I really had a tough time picking only 2 winners. I decided to go with the crepe/fruit roll up simply because it was so easy to make and it can be eaten anytime of day. It’s great for breakfast or dessert. Super easy to change up the fruit for variety. Congrats PattyK! I chose the cookie simply because the ingredients were fantastic and it makes a fantastic breakfast cookie or perhaps a snack. Fantastic “grab and go” snack.

PattyK’s Blueberry fruit roll-up crepe: * Blueberry omelet Roll-ups three egg whites * 1/4 cup protein freeze, ready with h2o (no almond butter) * 3/4 cup blueberries * 1/3 T Olive Oil Mix the eggs and protein freeze (mixed up). Then gently combine in 1/2 of the blueberries. Heat up the olive oil in a frying pan, pour the egg mixture in the pan and fry like you would eggs. Sprinkle the rest of the blueberries on the eggs and “roll” them up like a fruit roll-up. Enjoy piping hot. YUM!
Rachel’s Cookie: * 1 1/2 cups oats * 1/4 cup unsweetened applesauce, * 1/8 c prune puree (like “Lighter Bake”) * 1/4 cup (not packed) brown sugar substitute * 1 egg white, 1/4 tsp vanilla extract * 2 T unsweetened cocoa, * 4 T sugar substitute (like Stevia or Splenda) * 1 cup Protein Freeze * 1/3 cup oat bran * 1/2 tsp baking soda. Mix all of the ingredients together in a mixing bowl till nicely combined, then add in 1/8 cup mini chocolate chips. Place onto cookie sheet lined w/ parchment paper; tends to make about 18, 1 1/2 inch cookies. Bake at 350 for approximately. ten minutes, until middle is just starting to set. This is a great cookie fix!!?
Kim’s Tapioca Pudding: * 1/2 cup of Quinoa (measured after cooking) * 2 Tablespoons of Vanilla Protein Freeze * 1 Tablespoon of Fat Free Milk * 2 Tablespoons of water Dash of Cinnamon much more in the event you like strong cinnamon Dash of Stevia to personal taste Heat Quinoa, milk and water in a bowl add protein,and cinnamon and stevia combine properly and enjoy!! This recipe is much like getting Tapioca pudding and is fantastic meal while in a break at work.
