Chicken Breast and Red Wine Casserole

There’s nothing like a warm casserole to heat you up on a cold winter’s evening, and what better to add to the recipe than red wine? This is a rich, full flavoured hearty chicken breast recipe which is also very simple to make and will please anyone, from the kids to the parents!

This recipe serves 4-6 people and cooks in about an hour.

6 chicken breasts, 2 large onions, 2 large pepper, 300g of large mushrooms, 200g bacon rashers, 3 garlic cloves, 2 bay leaves, 300ml chicken stock, 2 tablespoons of redcurrant sauce, 3 tablespoons of plain flour, glass of red wine, olive oil, half an orange.

1. Put a large casserole pan over a high heat and also preheat the oven to gas mark six / 200C. Put the chicken breasts into a a large bowl and pour over some oil. Rub the oil over the meat, then coat in flour, and add salt and pepper for seasoning. Once well seasoned put each breast into the pan and allow to brown on both sides.

2. While the chicken is frying cut the bacon into smaller slices. Peel and slice the onions. Remove the chicken and put the bacon and onion in. Lower heat to medium and allow to cook for 4-5 minutes. Add more oil if required.

3. After 5 minutes crush in the garlic into the onion and bacon (no need to peel the garlic cloves). Add a little flour to the pan and continue to stir for another couple of minutes.

4. Clean and cut up the peppers and onions and add to the pan. Pour over the redcurrant sauce and then take the orange a use a grater to add some orange zest to the mix. Mix the whole lot up really well before sticking in a couple of bay leaves. Let it cook for another couple of minutes.

5. Season a little with salt and pepper, add the chicken stock and red wine (make sure you have a little sip yourself) and bring to the boil. Once boiled, lower the temperature, add the chicken and put the lid on. Put in the oven and leave to cook for an hour.

6. Serve immediately once the hour is up for best results. Serve with more wine and some thick, crusty bread rolls – you want to be able to have a clean plate!
