In all truth, one of the most difficult recipes to make is the ice cream and sorbets. Reason being, everyone’s ice is different. The trickiest part to making the ice cream and sorbets is getting the ice to liquid ratio just right. If you do not have enough ice, then your ice cream and sorbets will be runny. On the other hand, if you have too much ice, your frozen dessert can get so thick that it causes the blade to drag, which causes the fan to drag, and eventually your machines motor will get hot and the thermal breaker will cut the machine off before it ruins the motor.
