Chicken Balti: A Great Curry

It is believed that the chicken balti as we know it in the UK has it’s origins in Birmingham where it enjoyed rapid growth in popularity during the 1980s. The word “balti” is actually the name of the cooking pot and serving dish rather than an actual recipe, but anyway, let’s not get carried away with the technicalities. Below is one of my favourite chicken breast recipes – a fantastic chicken balti curry.

Chicken Breast, Chickpea and Lemon Casserole

Casseroles are one of my favourite meals to cook for several reasons. Firstly, they are easy. Most of the time you just need to fry a little meat, throw all the ingredients into a saucepan and stick it in the oven for 45 minutes. Secondly, they are filling and warm – great for winter nights, and thirdly, they are really healthy.

Chicken Biryani Recipe

Biryani dishes originated in Persia (now Iran) and the name comes from the Persian word bery which means ‘fried’ or ‘roasted’. There are a large number of Biryani dishes – Wikipedia lists 19 so I’m not going to list them all here!

Chicken Breast and Red Wine Casserole

There’s nothing like a warm casserole to heat you up on a cold winter’s evening, and what better to add to the recipe than red wine? This is a rich, full flavoured hearty chicken breast recipe which is also very simple to make and will please anyone, from the kids to the parents!

Chicken and Leek Casserole

Leeks are great in casseroles. They are high in maganese, vit C and iron so have a big tick in the healthy box. This particular chicken breast recipe is great for colder winter evenings and will fill the whole family up, with 1 chicken breast per person.

Chicken Breast Casserole Recipe

I love chicken breast recipes, not because I particularly like chicken breast meat, but because it’s the foundation for so many fantastic recipes that really it’s only limited by your imagination. Here for example, take some chicken breast meat, potatoes, butternut squash and vegetables, mix it all up, put it in a casserole dish and within an hour you have yourself a fantastic, healthy meal for all the family!

A Very Indulgent Recipe

Below is a recipe for a (let’s face it) pretty unhealthy cake – banoffee and marshmallow to be exact. However, don’t feel too bad, one slice won’t do you any harm, and it is amazing! Follow the instructions and you’ll have people begging for another slice.

Eating Soup Can Help You Lose Weight

Most people who have tried to diet will tell you that losing weight is a tough business. The main reason people find it so hard to resist that extra slice of pizza of chocolate cake is because hundreds of thousands of years ago our brains were evolving in a time when food was scarce – our brains evolved to tell us that we needed to eat high calorie food as often as we could. However, the problem now is that we obviously do not live in a world where high calorie food is scarce. In fact, we live in a world where high calorie food is hugely abundant and easily available, and our brains have evolved to tell us to eat as much as possible (because it doesn’t know that the next meal is just around the corner!)

Squash Soup, Curryfied

I made my usual squash soup recently when I had some friends round to dinner… As I dished it up someone mentioned that they had been given a spicy version of squash soup and I was immediately intrigued. Having now tried out a spicy version of this soup I can safely say that I prefer it.
