It is not imperative to be a trained cook to make a fantastic meal. Even the simplest recipe like a pork chop, can get rave reviews if you know the way to cook it well.
You might discover hundreds of pork recipes in as many recipe books, but the recipe I pen down here takes pork chops to an entirely new level.
The given recipe serves 4 people – You can choose to divide it into 2 parts if there’s just 2 people unless you are very hungry
Four 1-in thick pork chops 2 big sweet onions, Vidalia preferred, sliced very thin one cup heavy cream Salt and pepper
Four small baking potatoes (If cooking is not your cup of tea then you can even buy readymade mashed potatoes and put in some butter and milk to bring them up to a good standard) butter and milk for the potatoes if you like real mashed potatoes.
Greens, spinach or green veggie of your choice.
Trim off a few slivers of fat from the chops leaving the rest on., Put the slivers in a heavy skillet, large enough to hold the chops and heat over low heat till they shed a little fat.
Keep the flame low, put in the chops and add the sliced onions and proceed to smother the mix. Add salt and pepper and now cover the skillet and cook for 2 hours.
Close to one hour ahead of serving time start planning the mashing and peeling of the potatoes. Ditto regarding the green vegetable. This is not a time-sensitive recipe so simply relax.
After the 2 hours have finished, expose the chops and introduce them to a warm 200 deg oven.
Increase heat to higher flame, add in the cream and reduce the combination till it has a sauce-like consistency. Do not make it too thick.
Place a chop on each plate along with a generous offering of mashed potatoes. Spoon the onion mixture over the meat and potatoes & offer the greens on the side, perhaps with a little pepper and vinegar splashed on them.
