Gluten is a protein contained in grains like rye, wheat, barley and certain oats. Some people find it hard to digest therefore it can irritate the digestive tract and other organs. Here are three delicious and easy-to-make gluten free recipes – a tasty starter, a spicy main course, and a yummy dessert.
Corn and Chicken Soup. Ingredients: One whole chicken (cut into portions with skin removed), a chopped onion, a peeled and sliced carrot, a chopped celery stalk, 6 black peppercorns, a bay leaf, an 8-ounce can of creamed corn, salt and pepper, and a quart of water.
Put all the ingredients into a large wok or saucepan over medium heat. Bring to the boil, then simmer for 30 minutes. Strain the stock and remove the chicken. Add the strained stock back into the mixture. Add the creamed corn and stir. Bring to the boil and allow it to simmer for five minutes. Shred the chicken into pieces and stir in.
Chili Colorado (serves 4): 2 pounds of lean beef (cut into cubes), three tablespoons of rice flour, quarter cup of extra-virgin olive oil, one minced garlic clove, quarter cup of chili powder (or more), five cups of beef stock, one teaspoon of sea salt. Put the beef cubes into the rice flour and toss so that the meat is evenly coated.
Heat the olive oil over medium heat in a large skillet. Add the beef and reduce the heat to low. Stir and cook for about 8 minutes until the beef is tender and browned. Add the garlic and the remaining rice flour and cook for a further 2 minutes. Add chili powder and stir.
Pour in the beef stock and add the sea salt. Bring the mixture to the boil on medium heat. Reduce the heat to low and simmer for about 30 minutes until the meat is cooked properly and the sauce has thickened.
Toffee and Cinnamon Apples (serves 4): Half a cup of butter, two tablespoons of white sugar, half a teaspoon of ground cinnamon, four peeled and cored apples (cut into thin wedges), 10 pieces of caramel, four tablespoons of heavy cream, and half a cup of pecan nuts.
Stir the butter, cinnamon and sugar in a large skillet until the sugar dissolves. Put the apples in a pan – stir and cook for 5 minutes until they color and soften, then add the caramel. Reduce heat and stir until the caramel has melted. Add the pecans and cream, stir and simmer for a minute or two. Cool slightly, then serve. That’s it – three lovely gluten free recipes.
