In all truth, one of the most difficult recipes to make is the ice cream and sorbets. Reason being, everyone’s ice is different. The trickiest part to making the ice cream and sorbets is getting the ice to liquid ratio just right. If you do not have enough ice, then your ice cream and sorbets will be runny. On the other hand, if you have too much ice, your frozen dessert can get so thick that it causes the blade to drag, which causes the fan to drag, and eventually your machines motor will get hot and the thermal breaker will cut the machine off before it ruins the motor. An easy way to remember the correct ratio for ice creams and sorbets is that for every 1 cup of liquid, you should have about 3 cups of ice, frozen fruit, or a combination of the two. This one to three rule is going to help greatly in getting that perfect amount of ice to water. Don’t use any pieces of ice that are larger than the hole in the lid.
Remember, when making ice creams and sorbets in the Vita-mix, a trick of the trade is to use the tamper while making the frozen dessert to help reduce air-pockets or frozen pockets, and better the flow of the contents in to the blades. What happens often in a Vita-mix is that because the blades homogenize the ice or frozen fruit so fast with the liquid that the machine might either create an air-pocket, or the bottom section of the container (bottom 3 cups) might be really thick and frozen and it will appear as if the machine does not look like it is doing much. But actually, it is doing exactly what it is designed to do. During this process the machine is breaking down the ice to a perfect creamy state. You will see 2 different colors in the frozen dessert as the machine vortex’s the food.
The natural rotation of most contents in the Vita-mix is out from the bottom, up the sides, across the top, and then back down towards the center again to the blades, and then the journey begins again. The downside to not using the tamper is that the frozen dessert ultimately becomes too thin from this duration of friction. However, by using the tamper, and constantly moving the tamper up and down and also left and right in a continuous motion while fully extended into the container will allow for a better mixture and movement of any thick air or frozen pockets and will allow the contents to rotate quicker, therefore allowing for less time on high speed and keeping your frozen dessert thick and creamy!
