Healthy cake? This phrase sounds like an contradiction, like “jumbo shrimp”!
Cake is a sweet decadent treat that we eat occasionally as a slightly guilty pleasure. It’s not a health food! We eat it because it tastes wonderful, and we figure it is worth whatever negatives that come with it (like lots of sugar, and a high calorie count) because we don’t eat it all that frequently.
If we do hear of a healthy cake, we’re likely to write it off as something that will taste bad, even without trying it first.
You are unlikely to believe that a healthy cake can still be a delicious cake. The minute a cake becomes healthy, it stops being cake and turns into something else, akin to how zucchini bread is also not cake.
Since healthy food and cake don’t go together very well, let’s revision our efforts as baking a healthier cake. If we try to make a cake that is less unhealthy, it doesn’t make it sound like we’ll be replacing the chocolate with tofu.
Most cakes are simple. The cake itself, spongy layers that bake up from flour, eggs, butter, and sugar, and the frosting that tops it. Frosting is usually made from sugar and butter.
How can we tweak each of these two items to make them healthier, but without affecting flavor? It can be done. Health food restaurants and vegan restaurants do offer desserts – and often these desserts are tasty enough that if you did a blind taste test, you would not be able to identify the ‘healthy’ one from a field of less-healthy competitors!
Take one ingredient that is less healthy, and substitute a healthier alternative. There is no need to change the whole recipe. Start small, one component at a time. You can do this with your favorite cake recipe, there is no need to get a special recipe for ‘healthy cake.’
Whenever you are experimenting though you’ll want to try out your new version before serving it to guests. Cake recipes can be fussy things. Try it at home with just your family, to make sure that your latest substitution experiment doesn’t ruin a cake for an important occasion.
